Cosmo’s Cosmic Chicken Fajitas

  • 2 Red (Bell) Peppers
  • 2 Green (Bell) Peppers
  • 2 Tbsps Olive Oil
  • 2 Onions, Chopped
  • 3 Garlic Cloves, Crushed
  • 1 Chili pepper (choose one that is the right level of spice for you, or none at all), de-seeded and chopped finely
  • 2 Boneless Chicken Breasts
  • 60g Button Mushrooms, Sliced
  • 2 Tsps Freshly Chopped Coriander (cilantro)
  • Grated Rind of 1/2 Lime
  • 2 Tbsps Lime Juice
  • Salt & Pepper
  • 4 Wheat Tortillas
  • 4-6 Tbsps Light Sour Cream


  • Cut the peppers in half, remove the seeds and place skin-side upwards under a preheated moderate grill until well charred.
  • Leave to cool slightly and then peel off the skin; cut the flesh into thin slices.
  • Heat the oil in a pan, add the onions, garlic and chili, and fry them for a few minutes just until the onion have softened.
  • Cut the chicken into narrow strips, add to the vegetable mixture in the pan and fry for 4-5 minutes until almost cooked through, stirring occasionally.
  • Add the peppers, mushroom, coriander, lime rind and juice, and continue to cook for 2-3 minutes.
  • Season to taste.
  • Heat the tortillas, wrapped in foil, in a preheated oven at 180C/350F/Gas Mark 4 for a few minutes.
  • Blend them in half and divide the chicken mixture between them.
  • Top the chicken filling in each tortilla with a spoonful of light sour cream and serve garnished with tomato salsa and lime wedges.
